Cold Crab Spaghetti
serves 4
Ingredients
2 C cooked spaghetti, drained, chilled
8 oz crab meat, drained
2 T olive oil
1 t lemon zest, grated
1 t lemon juice
1 t Dijon mustard
1 T parsley, chopped
1 T basil, chopped
1 T fresh mint, chopped
1/2 t red pepper flakes
Instructions
Whisk together the oil, vinegar, lemon zest, lemon juice, Dijon, herbs, red pepper flakes, then season to taste.
Toss the spaghetti into the dressing, plate, garnish with crab meat.
